Christmas

We had a fun Christmas. I can't believe it is over, so sad. It was so nice to have a little break from all the craziness. I love having my kids home and enjoying each of their personalities. I told my knight family I would post recipes from the Knight Christmas party.. so, here we go...

Homemade French Bread ( I use my kitchen aid)

2. 1/2 c very warm water
2. heaping TB. yeast ( I use SAF)
2 TB. sugar
mix and let sit for 5 min
add:
6 c. flour & 1TB. salt on top of flour
2 TB. oil
Mix and knead for 5 min( I do all this in my kitchen aid with bread hook)
Rest for ten min. in bowl.
Knead & divide into 2 halves
Roll into long rectangles, tuck ends. Cut small slits across loaf with knife-Raise 20 min.
Grease pan (cookie sheet) Bake 350' for aprox. 25 to 30 min. (depending on oven).
brush with olive oil


Polly's Chicken Alfredo Sauce

1 Pkg. grilled chicken (I buy from Costco)
2TB. olive oil
garlic salt
3/4 to 1 c. flour (depending on how thick you want it)
1 cube. butter
2c. Cream
1c. milk
1c. chicken broth
2 chicken bullion cubes
2c. shredded parmesan cheese
Place chicken in fry pan add garlic and olive oil. sate.
Combine flour and butter into a paste. Mix well. Slowly add cream, milk, and chicken broth to paste. Mix well.
Add chicken bullion cubes and heat over med. heat until thick and bubbly, stirring constantly.
Add parm. cheese and chicken. Serve over favorite noodles.

Polly's Spaghetti Sauce

One jar spaghetti sauce
1. 1/2 lb. ground beef
1lb. italian sausage
1/4c. minced onion
2 to 3 tsp. minced garlic
1 can (28-oz.) diced tomatoes
2 cans (6-oz.) tomato paste
2 cans (8-oz.) tomato sauce
2TB. brown sugar
1 TB. lemon juice
1c. beef broth (or more depending on how thick you like it)
Italian seasonings to taste

Brown ground beef and sausage add, onion and garlic.
Drain off fat
Stir in jar of spaghetti sauce and add tomatoes, sauce, paste, and beef broth
add seasonings and brown sugar.
Simmer for at least two hours.
Add lemon juice last 5 min. of simmering.
Sauce is better if it sits for a day.


Ice Cream Pie

1 oreo crust (pre made)
1 half gallon ice cream ( any flavor)

Soften ice cream, put in crust.
freeze. Serve with favorite toppings.

It has taken me forever to post pictures, mainly because things have been so busy. I do love to cook, I always have. (I know it's a little weird)

I'm SOOO glad you posted these. I didn't realize you made the bread! I'm excited to try it. I made some wheat bread yesterday but it was just okay. I need to get your recipe.
